As I mentioned in my last post, I usually spend Friday's baking and testing new things. However, this week, I'm spending my time on Friday with my wonderful family. So I decided to do my baking day today.
My most recently experimentation has been flavors. When the money is available, I've been purchasing different flavored extracts here and there. My most recent purchase was an almond extract. With it, I made almond based white cupcakes, and an almond flavored... shlack.
Now the "shlack", as I'm calling it, was originally suppose to be frosting. Homemade frosting and I don't get along very well. Be that as it may, I am determine to get it right. I made a serious lapse in judgment though on Saturday when a recipe I was trying called for powdered sugar, and I didn't have powdered sugar. I have a cookbook that suggest you can produce sugar in its powdered form if you add a little bit of cornstarch and blend it in a food processor.
I unfortunately did not have the patience to make it so powdery, and the frosting came out, well, cold and grainy. But the almond flavor is quite lovely.
So, I'm going to spend some time boiling it down and seeing if it will return to a more solid form after sitting for a while. It's going to get through out otherwise, so I figured I might as well not let an opportunity go to waste.
Also on the docket, I have some caramels I want to try my hand at. Basic candy making 101.
